Lion's Mane Mushroom "Chicken" Quesadillas

  1. Preheat oven to 350F

  2. Shred/peel apart lion's mane into 3 inch long, 1 inch wide strips, salt to taste

  3. Heat skillet on medium high and dry roast the mushrooms to release excess moisture until size is reduced by at least half

  4. Remove Lion's Mane from heat, season with 1/2 tsp smoked paprika, 1/2 tsp cumin, 1 tsp chili powder, 1/8 tsp cinnamon and 1/8 tsp cayenne

  5. Place Lion's Mane onto baking sheet lined with parchment paper and bake for 10 minutes at 350F

  6. Add 2 Tbsp oil to skillet and caramelize 1 chopped onion and 1 chopped red pepper

  7. Once caramelized, add the baked Lion's Mane and 2 minced garlic cloves to the skillet, cook for 2 minutes, then shut off heat

  8. Heat your tortillas with your favorite cheese and add in 1/4 - 1/2 cup of Lion's Mane mushroom mixture per tortilla

  9. Serve with guacamole, salsa, scallions, beans and quarter lime!
